Homemade French Fries with Roasted Veggie Salad and Chicken

Recipe time!
As I stated in my last post, I am pretty proud of my potato cooking skills. Usually, I stick to breakfast potatoes, but recently I have been trying some hand-cut fries.

I start with a basic russet potato from Kroger.

I cut the fries long ways and multiple times to make sure they are thin enough. There isn’t a certain or a “correct” way, just whatever works!

Next, I melt some butter in a large pan on the stove and put the heat on medium. I cover and check on them about every 5 minutes and flip them with a spatula.

These are all my herbs and spices I use to season the fries. Occasionally, I add cayenne pepper.

I season the chicken the same as the potatoes! Same with veggies, except I roast them. I roast at 375 degrees for about 10 minutes.

Finally, I add some greens at the bottom because I have been feeling sick lately, and vitamins are the best cure.

Ingredients

  • 1 russet potato
  • 1 broccoli crown
  • 1 red bell pepper
  • 1 handful of shredded carrots
  • 1 handful of mixed greens (my fav is spinach & arugula)
  • 2 chicken tenders, cut into 1-inch pieces
  • Salt, pepper, onion flakes, Italian herbs, garlic powder
  • alted butter & olive oil

Foodie Update

Here are some recent recipes I have been trying out. Much of my inspirations come from my Pinterest under my meals board! My favorite places to shop are Kroger and the occasional Trader Joe’s or Publix. Important note: my base seasoning includes salt and black pepper, and usually I add garlic unless I am going for a Mexican feel. Let’s get into the recipes:

  1. Tacos: filled with brown rice, red peppers and mushrooms, corn and black beans, sometimes tofu or chicken, and topped with avocado! Every time I make these I use some taco seasoning I found in the international section in Kroger, and squeeze a little lime juice on the veggies on top of salt and pepper.
  2. Panini: filled with Havarti and provolone cheese, sauteed Italian herb mushrooms and spinach, between some white mountain bread. Basically a fancy grilled cheese. I love switching up the not so healthy carbs by using different kinds of bread. Seven Sprouted Grains bread is one of my favorites healthy options.
  3. Blueberry oatmeal muffins: I honestly have no idea what recipes I mashed together to make these little healthy dudes. Some easy recipes can be found on the back of your oatmeal boxes! Next time I make them I will have a more detailed recipe.
  4. Roasted Veggies: brown rice with simple Italian herb stir-fried asparagus, carrots, broccoli and kale.
  5. Taters n’ Veg: brown rice under sauteed kale and mushrooms next to some delicious fried potatoes (I am addicted and I swear by my potatoes).
  6. Breakfast: a fried egg, avocado, breakfast potatoes, and some sauteed greens!
  7. Asain stirfry: Jasmine rice under a fried egg and sauteed red cabbage, broccoli, and mushrooms in my favorite Asian sauce.
  8. Some more roasted veggies over rice 🙂
  9. Chicken noodle soup: I am proud to say I have mastered this after about 10 tries. I have a special ingredient that I will elaborate on in another post directed towards the best soup ever!
  10. Edamame pasta and stirfry: I love replacing carbs and have used all of this brand’s products. I also topped with some chicken and sauteed everything in some italian seasoning!
  11. French toast: Holy. Moly. The best thing I have ever made! detailed recipe coming soon 🙂
  12. Quinoa with roasted veggies and tofu: I sauteed these in sale dales seasoning and it was amazing! Be sure to press the tofu and soak it in seasoning for about 30 min-1 hour before roasting in the oven and it will taste much better.

Sullivan Cousins

Hey y’all! This past week I took some fun pictures with the Sullivan family. Dalton and Savannah are some of my closest friends, and their mom, Holli, is the best! Their family is so kind and always welcomes their home to me, so when they asked for cousin pictures I was so excited. I loved the red, white, and blue theme, and they were all energized, natural, and hilarious behind the camera!

Hey y’all! Fall is definitely in the air now, and I’m pretty sure Southern Indiana will not be having anymore 90 degree days for a while. Although I can look down on where I live, one thing we are blessed with is the full changing of the seasons.
